The Holmes Cay Fiji 2004 17-Year Edition is a premium rum made with molasses and distilled in pot stills. It was initially aged for 12 years in a tropical climate in an ex-bourbon barrel, before being transferred to American oak casks in the UK for an additional 5 years of maturation. This limited edition rum, with only four casks available, has an alcohol content of 58% and offers a complex and nuanced flavor profile. On the nose, it has subtle grassy and fresh banana notes, while the palate is greeted with a burst of citrus, pepper, and hints of caramel. The mouthfeel is buttery, leading to a dry finish with spicy oak and balsam notes.
